Mango Blueberry Coconut Pudding

Mango pudding is like nostalgia served on a plate. It is genereal one of the more popular desserts to have whenever one visits oriental restaurants. I fondly remember ordering them as a child; that wobbly sweeten pudding drenched in rich and creamy evaporated milk – oh, not to forget that perfect balance of chopped mangoes with the soft pudding – it was my joy.

Desserts should be easier to make don’t you think? So was definitely was pleased to find these powdered premixes by Redman, Phoon Huat. Thank you @shopee for sending these over, I’ve jazzed up the traditional pudding with blueberry compote, coconut milk and chopped mangoes – p.s my tummy will be pleased if you do go crazy with the chopped mangoes.

(Makes 4 Cups)

200g Mango Pudding Powder (Redman)
600ml Water

1/2 Cup Dried Blueberries (Redman)
2 Tbspn Light Brown Sugar
1/2 Tbspn Lemon Zest
3/4 Cup Chilled Creamy Coconut Milk


• Mix Mango pudding powder in 600ml hot water (70-80 Degrees)
• Chill overnight
•Prepare blueberry compote, in a blender, blend dried blueberries. Add a tbspn of water to help aid the blending
•Transfer blended blueberries to a small pot, cook on low heat, adding the brown sugar and lemon zest. Simmer gently and turn off heat once reduced and sugars dissolve.
• Once blueberry compote is cooled, use a spoon to gently scoop and lay over set mango pudding.
• Then top with chilled coconut milk and garnish with fruits of choice, I have garnished with freshly chopped sweet mangoes! Enjoy!
